LAS VEGAS (Nov. 8, 2021) – Bazaar Meat by José Andrés inside SAHARA Las Vegas announces two holiday dining experiences with festive curated menus this Christmas Eve and New Year’s Eve.
Available for $130 per person on Friday, Dec. 24 from 4 to 9 p.m., the La Noche Buena Menu will begin with Croquetas de Jamón with creamy béchamel and jamón fritters, Queso y Membrillo featuring manchego cheese and quince paste, and Ferran Adrià Olives with liquid green olives and gordal olives stuffed with piquillos. The delectable second course includes Seafood Stew featuring lobster, shrimp and crab, and Pan Cristal, toasted cristal bread served with Spanish olive oil. For the main course, guests will choose between Milk-Fed Suckling Lamb Cordero Asado with chickpea and spinach stew or Lomo de Cerdo Relleno featuring stuffed pork loin, rasin, apple, apricot and pork demi. Rounding out the main course will be the decadent Buttered Potato Purée, Ensalada Mixta with sherry dressing and Grilled Asparagus with romesco sauce. Guests will end the holiday evening on a sweet note with Roscón de Reyes, a Spanish sweet bread.
The carnivorous haven is also dishing up a delicious menu to ring in 2022 on Friday, Dec. 31 from 5 to 10 p.m. The $185 per person New Year’s Eve menu will feature Cotton Candy Foie Gras; Ferran Adrià Olives,with liquid green olive spheres, and gordal olives stuffed with piquillo and anchovy; Bagel & Lox Cone served with dill cream cheese and salmon roe; Smoked Salmon and Crispy Rice served with grapes, yogurt and capers; The Classic Tartare with beef sirloin, Savora mustard, egg yolk, HP Sauce, anchovy and Parker House rolls; and Chef’s Selection of Cured Meats. The dining experience continues with Beet Tartare with golden and purple beet, piquillo chip, capers, chives, parsley and shallot; Rosewood Texas Ribeye, Spanish-style chuletón, oak wood-fired; Buttered Potato Purée; Pink Oyster Mushrooms with Dashi broth and miso dressing; and Josper-Roasted Asparagus with romesco sauce. Guests can complement their meal with an additional course, including Kobe Eye of the Rib for $65 per ounce, or “Vaca Vieja” Mindful Meals Rib Eye for $45 per six ounces. Assorted desserts will include cream puffs, little cakes and assorted tarts.
