Emeril’s New Orleans Fish House in the MGM Grand Hotel & Casino has launched a new four-course winter tasting menu for $55 showcasing the restaurant’s signature and new dishes from Chef de Cuisine Jean Paul Labadie.
First and second course options include Hamachi lettuce wraps with ponzu and serrano chili; Creole boiled shrimp cocktail with local micro greens; gumbo with shrimp, okra and andouille sausage; and butternut squash soup with foie gras emulsion, crispy duck confit and fried Brussels sprouts.
Entree selections include grilled filet of beef with roasted smashed sweet potatoes and rum reduction; pan fried rainbow trout with jumbo lump crab; herb roasted free range chicken breast with bacon-braised Brussels sprouts and country smashed potatoes; and Emeril’s sweet barbecued organic Scottish salmon with andouille pork sausage.
As no meal is complete without dessert, guests can select from pecan pie, Emeril’s banana cream pie or bread and butter pudding with homemade vanilla bean ice cream to finish off their meal. Can’t decide on just one? The “Taste of New Orleans” is also available, offering a petite version of each option.
This four-course menu is available during dinner service for $55 per person with wine pairings starting at $35. Each wine pairing is personally selected by sommelier Scott McSimov to complement the flavors of each course.
Emeril’s New Orleans Fish House is open daily for lunch from 11:30 a.m.-3 p.m., dinner 4-10 p.m. and Mardi Gras happy hour from 2 – 6 p.m. and 9 – 10 p.m.
